Tomato Gravy and Biscuits





Tomato gravy and biscuits was a regular on the breakfast menu when I was a girl and it was one of my very favorite breakfast items. It tasted so good to me that somehow I was convinced it was difficult to make, so it took me years to attempt it on my own. However, when I did try to make it, I discovered it was amazingly simple and I wish I had tried it long ago.  Now it is a well-liked regular on our breakfast table as well. 

Here is the very simple recipe. 

3 Tablespoons butter
3 heaping tablespoons flour
2 1/2 cups tomato juice
1 cup milk
salt and pepper to taste


Melt butter over medium heat. Add flour and stir until smooth. Slowly add tomato juice and milk, stirring constantly. Add salt and pepper to taste. Cook over medium heat until thickened. Serve over biscuits or toast.
